Yes that’s right. Putting media on blog posts could really make them cluttered and moreover, it will slow down the loading speed and affect readers’ experience. For tutorial posts that need a lot of images, I haven’t seen any good solution yet, someone embed a video or put a slide in the post but it is really more difficult to follow.
I am not using plugin for mobile viewing but I am trying a responsive theme on my new site and it works really great. The most important feature is that the theme could retain design of our blog.

That can be a good thing or a bad thing. Too many can clutter up the post, but too few can make it more difficult to get my point across – such as with tutorial-type posts.

As for mobile devices, I use a plugin to format my blog for mobile devices. It works pretty well, and removes a lot of the clutter caused by sidebars, and formats my posts, and navigation, to make my blog easy to read on mobile devices.
